ALBACORE CANNELLINI BEAN BRUSCHETTA

The holidays are here! This "not your average tuna" recipe makes the perfect appetizer for holiday parties. It is truly gourmet, and easy to make too! 

SERVINGS: 6-8 | TOTAL TIME: 15 MIN

INGREDIENTS:
2 cans Fishgirl Albacore tuna (Click here to buy!) 
3 tbsp Durant Olive Mill’s extra virgin olive oil (this high quality EVOO is a must!)
San Juan Island Sea Salt
2 baguettes, sliced
Freshly ground pepper
1/2 cup lemon juice
4 tablespoons dijon mustard
1 can canellini beans, rinsed and drained1/2 red pepper finely chopped
4 stalks chopped scallions
2 celery stalks, thinly sliced

DIRECTIONS:

Preheat oven to broil. Arrange sliced baguettes on baking sheet and lightly brush with olive oil. Bake until golden brown.

Wisk together lemon juice, mustard, olive oil and salt and pepper to create dressing mixture. Set 1/2 dressing aside. Add remaining ingredients; toss.

Brush baguette slices with dressing. Top with tunamixture and garnish with finely chopped scallions andred onion. This is truly gourmet.
