Coho salmon are the most versatile salmon species. They're mild and easy to use in a host of different preparations and styles. But in our opinion, at the end of the season, it's hard to beat it's big, fat fillets, grilled perfectly on a fall day and paired with some roasted potatoes, asparagus, and a pint of your favorite IPA from your local microbrewery. Yum.
